Frugal Tomato Juice – Great for cooking or drinking
Does anybody else avoid recipes that require the use of tomato juice? I’m not likely to have it on hand because it’s expensive. I enjoy drinking it with a little hot sauce and salt, but really don’t enjoy paying the price. If I could just come up with a way to make tomato juice from tomato paste I’d have it made. Now my Mom always used tomato paste in her sauces and I guess I understand why. The flavor is more intense because it’s concentrated. So, why did it never occur to me to think of tomato paste as a concentrated tomato juice? Makes sense and it works! If I can just find all those good recipes I discarded that called for tomato juice…
